Celebrate Texas Cheese at Celebration Restaurant With the Winners of the American Cheese Society Competition

A couple of years ago we threw a cheesemaker appreciation reception at Celebration Restaurant. Well, we’re doing it again on October 27. Anthony Bourdain in Dallas on Thursday: No Reservations Offers No Media Access

Several months ago, I received a press release announcing the date and details for Anthony Bourdain’s show at the Majestic Theater. I posted the information on SideDish and we included the event the October D Magazine events listings.

In the middle of September, I received an email from one of the PR peeps handling Bourdain’s tour. She asked:

We are putting together press requests for Anthony today to see what he has time for scheduling wise. Would you be interested in a possible interview leading up to the show? If so, what would be your deadline for the interview in order for it to run before the show? Of course, the more coverage we receive from any one particular outlet will be given priority.

I said sure. She asked if the interview would be in the November issue and I said no we are a monthly magazine and that issue has already gone to the printers. I’d be happy to post it on the blog.

Gmail silence.

My humble offerings were not good enough. No interview. Today same PR peep says no media/photography access to the event. So, Tony. Have a nice show. I’m sorry we can’t cover it. If anyone out there would like to buy the excellent tickets I bought for the show, shoot me an email. I’m taking reservations.

UPPITY DATE: Anthony Bourdain sent me a note saying he doesn’t employ handlers or PR people. He has no involvement in how local promoters deal with media credentials.

All Orange Cup Natural Frozen Yogurt Locations in Dallas Are Closed

I just called all of the Orange Cup locations in Dallas and the phones are disconnected. Now, does this mean frozen yogurt is trending down? I don’t know as I am not an expert in the frozen yogurt business. But, now that I think about it, I haven’t been getting blasted by shop openings. Just cake balls. Every day another cake ball. What is the next sweet trend? (I did like the pie shakes idea.)

Fall Classic! Rangers v Cardinals Tonight: Let’s Cook

Fun to look at in the front yard. On TV? Not so much. Go Rangers.

Raya has told you where to go if you want to watch the game in public. However many of us prefer to view the game from the comfort of our own couch with a few friends and dogs. A commenter, who wants to party at home, asks what she can cook to represent each team. I know you will be tempted to say roasted a few Northern Cardinals. There are six of them in my front yard this very second. You can buy Nolan Ryan’s beef at Kroger and maybe do some toasted ravioli.

I say we get this party started! Get creative. Go Rangers!

World Series Dining: Ranger Fan Needs Tips on St. Louis Restaurants

That little boy in the picture is my nephew James. He is almost three. He loves the Texas Rangers and tells anyone who will listen that Michael Young is his best friend. (He kinda is!) James is psyched for tomorrow night’s World Series game in St. Louis between the Texas Rangers and the St. Louis Cardinals (7:05PM).

Another Disher is excited about the game. So pumped that he is flying to St. Louis for the Games 1 and 2 (Thurs.). He wants your help.

Good Asian Grub: Fish Pancakes at Toreore in Super H-Mart

D Magazine intern Carol Shih prowls Dallas in search of the best Asian cuisine. Recently she tried using sign language to speak with a Korean woman. Didn’t work. People are suspicious of writers these days.

When my college buddy Hannah visited last weekend, she dragged me to  Super H Mart in Carrollton to find her favorite Korean snack, bungeoppang (literal translation: carp bread), a rare treat in her home state of North Carolina. It took only a couple minutes for Hannah to spot the black appliance most street vendors in South Korea use to make this toasty fish pancake filled with red bean. Our stop: a little shop on the edge of the food court that spells out “Toreore” in red letters and sells “Chicken & Joy.”

Bolsa Owners to Open Two New Concepts in Former Jack’s Backyard Space

Christopher Jeffers and Chris Zielke (Team Chris) have taken over the former space known at Jack’s Backyard on Fort Worth Avenue and plan to open two restaurant concepts. One will be a family-friendly; the other will be a bar. (And it won’t pop up.) “Don’t have any names,” Zielke said. No other details from this reporter. Hey, let’s have a naming contest!!! St. Christophers? Christophers Crossing? Come on…

Restaurant Review: Four Sisters Cafe in Richardson

This opulent cafe, opened in early summer by Dale Wamstad (Del Frisco’s), proposed to add an all-American dining option to a much-neglected corner of Richardson. What arrived instead feels both overconceived and underwhelming: a two-story design hodgepodge of hot-air-balloon-shaped chandeliers, looming artwork, vinyl tablecloths, and hundreds of red-and-green LED lights that swoop, discotheque style, across diners’ faces. Likewise, the menu consists of a blind-man’s mix of appetizers (flatbreads, sushi, onion rings, and grilled quail’s nest—grilled quail served on a bed of crushed potato chips), followed by an equally chaotic mix of entrées. We were so surprised that any establishment would feature chopped beefsteak with grilled onions (and charge $14.50 for it) that we had to order it. The entrée arrived unironically, a disc of ground beef held together by grease and fear—a sad homage to the Greek diners of the 1970s.

Second Location of Company Café Nears Opening Day

According to co-owner Stephen White, the second location of the Company Café is “five weeks away” from opening in their new digs, the old Cremona spot, directly across from the Katy Trail Ice House. Meanwhile the Greenville restaurant is double staffed and training new kitchen employees. White  said he is still looking for another 100 employees.

The menu will be the same farm-to-table, healthy, and organic fare but they’ve hired a consultant to tweak the menu. Basically breakfast and lunch will stay the same but they plan to add more seafood and smoked meats at dinner. Kuby’s is “designing” a signature sausage. “I’m petitioning the city to get a Farmers Market set up twice a month on the Katy Tail,” White said.

There will be 80 seats inside and over 100 on the outdoor patio facing the Katy Trail.

Sonny Bryan’s Smokehouse on Inwood Re-Opens Today at 11AM

Last week a small fire in two unattached storage sheds caused the temporary closing of the original location of Sonny Bryan’s Smokehouse on Inwood Road. They re-open 11AM. On Wednesday, October 12, they will host a celebration with the Guns & Hoses Foundation of North Texas, a non-profit that the company has supported for years. From 11 AM to 8 PM, 25 percent of all sales that day at the Inwood location will be donated to the organization, which provides monetary support to families of fallen fire and police officers, and raises funds to benefit the youth of our community. In addition to the donation, Sonny Bryan’s Smokehouse will honor Dallas firefighters from Fire Station 47 with a lunch and an official plaque made from door knobs that were removed from the Inwood restaurant when firefighters responded to the September 27 fire.

Oak Cliff Restaurateurs Keep Secrets About New Restaurants

So, I’m avoiding real work and searching for the scoop on Sissy’s Fried Chicken on Henderson. We all know the general rules of posting CO permits:  The name on the permit in the former Hector on Henderson spot could be the real name of a home cooking or “place holder” for a gay bar. We won’t know until somebody either calls me back or I get lucky on the internet. Owners change names all the time after they’ve applied for a permit.

Anywhoo, I’m digging away and get off task. Oh, look! I find a permit pulled for a restaurant at 624 642 W. Davis. I’m not telling you the name of the LLC because Teresa Gubbins will be all over it like hot on fried bubblegum. I contacted several HIGH PROFILE restaurant people in The OC for info. Oh yes, they all know who and what it is, but none of them are talking. Okay, guys. I’ll remember that the next time you send me a press release about your new bartender or your fall brunch menu. Hah! Two can play this game. Grrr.

Is Savor Dallas Moving to Irving?

I got a semi-frantic email from a semi-frantic restaurant owner. “Savor Dallas is moving to the Irving Convention Center this year. We got our invite to participate and apparently they are moving to broaden their appeal.” I went deep into Savor Dallas’ Facebook page and found this:

Savor Dallas announces the 8th Annual event will be held March 30-31, 2012, and expands regionally. Participants can enjoy wine, food, spirits and the arts in the Dallas Arts District, and the new Irving Convention Center at Las Colinas, 500 W. Las Colinas Blvd.

Hey, Jim White! What is up? Are you changing the name to Savor Dallas and Irving? Have you ever heard of a basketball tournament called “The Final Four?” Dude, give us the news.

It’s The Most Wonderful Time of the Year: Striped Bass in Dallas

The last two Julys I spent some time in Boston. Not only do I love the city; I love the food. Particularly the seafood (duh). In 2009, I joined Jim “Sevy” Severson, wife/partner Amy, and their two kids on their family vacation. Yes, I am desperate for friends, but I wasn’t just busting into their family vacation, we’d all enrolled in Steve Connolly Seafood’s School for Chefs. Many Dallas chefs (Dean Fearing, Kent Rathbun, Marc Cassel, Sharon Hage) have toured and learned from the plant’s two facilities: one in South Boston, the other in historic Gloucester.

I ended up writing a feature about our trip. To this day it remains one of the most interesting (and fun) adventures of my life. Meeting the fisherman who risk their lives and fortunes on a daily basis changed the way I think about the food on my plate. Especially the seafood.

One of my fondest memories came during a tour of the plant in Boston where the fish are processed and packaged for delivery. Our guide at that point was Robert Chandler, a marine biologist, senior buyer, and general manager of the facility. As he was explaining how the scales were removed from fish, his right hand was massaging the mouth of a huge striped bass in a tub next to him. I made some snarky remark about his unconscious tendency to rub a fish and he laughed.  I wrote:

“I love this fish,” he said, absentmindedly massaging the mouth of the fish with his thumb. “They are the quintessential Massachusetts summertime fish. You know when the striped bass are running. The Red Sox are playing, and times are good.”

Anywhoo, it’s summertime in Dallas and this morning I received word that the striped bass are running. Those in the picture will be served at Fearing’s, Neighborhood Services Lovers & Preston, Dragonfly, and Neiman Marcus downtown tomorrow.
