It’s an awkward week for recipe bloggists — big holiday last week, Christmas isn’t for a month. Sigh. There’s nothin’ to do, man*! What am I gonna talk about, cheeky uses for Thanksgiving leftovers? You know years in advance the kinds of depraved things you’re going to do with your leftovers; you don’t need me to remind you that tacos are in play.
Alas, there’s a job to be done here. I’m not that big into snacking**, so I wouldn’t usually get too excited about something like chips. Likewise, I try to dispense with the superlatives in regard to my own recipes. Whatever, walls are coming down today.

The only thing that’s wrong with Dallas is the brevity of fall. It lasts all of three weeks. Maybe four, if we’re lucky. But whatever God-sent perfect weather we have now is making want to devour everything that’s remotely pumpkin-related. Randi and Taylor Tatsch opened the Tiny Cake Shop in Keller back in June 2012, but they’re setting their official grand opening for September 11 through 22. Every day the Shop offers 10 daily cupcakes flavors baked from scratch + a monthly seasonal flavor + a daily gluten free flavored cupcake (made from gluten free oat and brown rice flour).

There are other people like you, too. In fact, these other people are organizing a whole two-day Gluten and Allergy Free Expo with over 100 vendors providing samples of foods you can actually eat. On September 8 and 9 at the Westin Park Central, chefs, cookbook authors, and known health experts and nutritionists will be there to assist with preparing healthy meals without some of the most common allergens. McDonald’s better keep an eye on Erin McKool, the new queen of fast food. This mother of a four-year-old boy is opening up Start, a kid-friendly restaurant at 4814 Greenville Ave. that provides “good for you” food in a cutting edge environment. There WILL be a drive-through for moms-on-the-go. But really… healthy fast food? Isn’t this an oxymoron?
Owner McKool explains it best:
“Our food is healthy and handmade, but not necessarily ‘diet food.’ Organic and natural is critical to us, so all of our eggs, milk, sugar and many other items are organic. We only use meats and eggs from humanely raised animals, and we don’t use products that are raised on hormones and antibiotics, or treated with nitrates. Our bakery items are made with 100% whole wheat flour.”
The menu has everything from steel cut oatmeal with pecans, maple syrup, raisins, and dried cranberries to baked chicken and cheese empanadas. Substituting for a gluten-free English muffin or burger bun is just $1.50 extra, and over at the Kid’s Corner section, little ones can get grilled cheese sandwiches on multigrain bread with breaded and baked (or grilled) chicken bites. The only thing that’s missing are the french fries, but I guess those aren’t very healthy. Still, Start looks like a pretty darn good way to start and end the day, every day. Repeat this new mantra yourselves, folks: McKool’s is the new McDonald’s. McKool’s is the new McDonald’s.

Company Café made it to our list of Best New Restaurants in 2011. The locavore philosophy behind the menu is important and so is the wide variety of gluten-free dishes. I like Company Café because the food tastes good. I will go there as long as they can resource sweet potatoes.
On December 6, the second location on Company Café will open on the Katy Tail. The address is 3136 Routh Street and the parking entrance is on Browning just off Cedar Springs. The menu will include most of the healthy, organic dishes such as the Deep Bowl, gluten-free chicken and waffles, and gluten-free cakes. But their will be more. They are adding a Little Red Smokehouse from J&R Manufacturing in Mesquite and will offer smoked fish and meat.
And a La Marzocco Strada MP coffee maker like the one at Oddfellows. Company Café co-owner, Stephen White, says, “It’s the Maserati of coffee makers.” Several (hundred) web sites refer to this machine as a “barista’s wet dream.” There are fewer than 20 in the U.S. and Dallas has two. Somebody order another so we can make the La Marzocco Strada MP an official trend in Dallas. (It takes three of one thing.)
If you prefer a different buzz, Company Café on the Trail will have a full bar featuring house-infused vodka cocktails and, the waxing trend, a large patio. Remember, all distilled alcohols are gluten-free.
So, there you have it: something for everybody at Company Café on the Trail.
According to co-owner Stephen White, the second location of the Company Café is “five weeks away” from opening in their new digs, the old Cremona spot, directly across from the Katy Trail Ice House. Meanwhile the Greenville restaurant is double staffed and training new kitchen employees. White said he is still looking for another 100 employees.
The menu will be the same farm-to-table, healthy, and organic fare but they’ve hired a consultant to tweak the menu. Basically breakfast and lunch will stay the same but they plan to add more seafood and smoked meats at dinner. Kuby’s is “designing” a signature sausage. “I’m petitioning the city to get a Farmers Market set up twice a month on the Katy Tail,” White said.
There will be 80 seats inside and over 100 on the outdoor patio facing the Katy Trail.
