Ingredients – 4 servings
- 1/2 Cup Lime Juice Freshly squeezed
- 4 Tablespoons Simple Syrup
- 16 Leaves Mint Torn
- 1/4 Sliced Cucumber Cleaned and thinly sliced
- 8 Oz Ginger Divide into 6 oz. and 2 oz.
- 6 Oz Gin
- 1 Splash Soda Water
For the simple syrup, combine 1 cup of sugar and 1 cup of water in a saucepan. Bring to a boil for a few seconds. Set aside to cool. Muddle the lime juice, simple syrup, cucumber, and mint leaves together in the bottom of a pitcher or shaker. Add 6 ounces of ginger beer and gin. Stir well. Pour into glasses filled with ice, and top with additional ginger beer and splash of soda water. Garnish with lime or cucumber slices and a sprig of mint.
