Chef Brian Zenner is Recalled Back to the Kitchen at Oak

Chef Richard Gras resigned from Oak yesterday.
Chef Richard Gras resigned from Oak yesterday.

New-ish Oak chef Richard Gras tendered his resignation on yesterday. Today, the Apheleia Restaurant Group named Brian Zenner as executive chef. Zenner was in the trenches at Oak with opening chef Jason Maddy. He got a break when Apheleia Restaurant Group opened Belly & Trumpet. Maddy moved on and Gras was hired last July. Apparently Zenner will still oversee Belly & Trumpet. I’ve reached out to Gras for a comment, but no response yet.

Update: Gras will be in the kitchen through the weekend.

Chef Gras did an outstanding job at the Cafe Momentum earlier this month. Was really looking forward to more. So this is three chefs that the Apheleia Restaurant Group has lost in the last year or so. Now we go through the whole cycle of old chef out, new chef in, quality declines for a while, quality goes back up, things are doing ok, old chef out, ad infinitivum. One has to assume that Apheleia is OK with this business “plan.” As for me, it just makes me want to go to a more established place.
