  1. I asked for this recipe years ago when I was in the restaurant and they were kind enough to give it to me. It’s yummy and not hard to make. The recipe calls for individual molds but it can also be done in one large mold.

  3. Apparently Helen did not wish to share this recipe early on. I have two of her cookbooks from 1957 and 1974. Neither included the orange soufflé recipe.
