CHEESE STEAK SLIDERS
(MAKES 8 SLIDERS SERVES APPROX 4)

QUANTITY INGREDIENTS

4 TBS CANOLA OR SALAD OIL
1 LB RIBEY STEAK (SHAVED PAPER THIN)

TO TASTE KOSHER SALT & BLACK PEPPER (50/50 MIX)
1-1/2 CUP YELLOW ONION (CHOPPED 1/4 INCH)
1-1/2 CUP MUSHROOMS (SLICE 1/4 INCH)
1-1/2 CUP RED/GREEN BELL PEPPERS STRIPS 50/50 MIX
2 OR 3 HOAGIE ROLLS (CUT IN 2-1/2 INCH SLIDERS)
4 SLICES WHITE AMERICAN CHEESE (CUT IN HALF
4 SLICES PROVALONE CHEESE (CUT IN HALF)
PREPARATION

IN A SKILLET OR A FLAT GRIDDLE WITH HALF THE OIL AND A SPRINKLE OF SALT & PEPPER TO TASTE, COMBINE ONIONS, MUSHROOMS AND PEPPERS OVER MEDIUM HIGH HEAT UNTIL ONIONS AND MUSHROOMS BEGIN TO BROWN AND PEPPERS ARE SOFT. (NOTE THIS MAY BE DONE AHEAD OF TIME OR THE NIGHT BEFORE).

PLACE SHAVED STEAK IN HOT SKILLET OR IN FLAT GRIDDLE WITH THE REMAINING OIL, SEASON TO TASTE WITH SALT & PEPPER. WHILE STEAK IS COOKING BREAK UP MEAT USING TWO SPATULAS. PLACE VEGGIES ON SKILLET TO WARM WHILE MEAT IS COOKING. WHEN MOST OF PINK COLOR IS GONE FROM MEAT COMBINE WITH VEGGIES AND MIX.

TO ASSEMBLE, PLACE 1 SLICE OF EACH CHEESE ON BOTTOM OF HOAGIE, PLACE HOT MEAT-VEGG MIX ON CHEESE & SERVE.

CHICKEN SANDWICH

FOR 6 SANDWICHES

QUANTITY INGREDIENTS

6 EA. 8 OZ CHICKEN BREAST

3 TSP KOSHER SALT

3 TSP BLACK PEPPER

6 EA CIABATA BUN (OR OTHER FAVORITE)

6 EA ROMAINE LETTUCE LEAF (SHAPED TO BUN)

6 EA TOMATO SLICE

6 EA RED ONION SLICE

1-1/4 BASIL PESTO (see attached recipe)

12 SLICES PROVALONE OR MOZZARELLA CHEESE

PREPARATION

SEASON BOTH SIDES OF CHICKEN WITH ¼ TSP KOSHER SALT & ¼ TSP BLACK PEPPER. GRILL UNTIL COOKED THROUGH JUICES WILL RUN CLEAR. TOAST BUN IN 400 DEGREE OVEN FOR APPROX 3 MINUTES UNTIL GOLDEN. PLACE CHICKEN ON COOKIE SHEET AND COVER EACH BREAST WITH TWO SLICES OF CHEESE, PLACE IN 400 DEGREE OVEN FOR APPROXIMATELY 2 MINUTES OR UNTIL CHEESE IS MELTED AND REMOVE FROM OVEN. COVER TOP AND BOTTOM BUN WITH PESTO USING APPROXIMATELY 1-1/2 TBS PER BUN. PLACE LETTUCE, TOMATO, ONION ON TOP BUN IN THAT ORDER PLACE CHICKEN ON BOTTOM BUN. PLACE COMPLETE SANDWICH OPEN FACE ON PLATE AND SERVE.

MEATBALL SLIDERS

SERVES APPROX 6 PEOPLE MAKES 12 SLIDERS

QUANTITY INGREDIENTS

3 CUPS MARINARA (SEE ATTACHED RECIPE)

4 EA 8 INCH HOAGIE ROLLS CUT IN 3RDS

12 MEATBALLS COOKED (SEE RECIPE all beef)

6 EA PROVALONE CHEESE SLICED

2 TBS PARMESAN CHEESE

6 LEAFS FRESH BASIL (SLICED IN RIBBONS)

REPARATION

IN MEDIUM SAUCE POT HEAT MARINARA SAUCE TO A SIMMER. ADD PRE COOKED MEATBALLS AND LET SIMMER FOR APPROX 30 MINUTES UNTIL HEATED THROUGH.

CUT HOAGIE ROLLS IN TO SLIDER PORTIONS APPROX 3 INCHES EACH. PLACE ON A BAKING SHEET. PLACE 1 MEATBALL IN EACH BUN WITH APPROX 2 TBS OF SAUCE. COVER WITH APPROX TO TBS OF MOZZARELLA CHEESE. PLACE IN OVEN FOR APPROX 2 – 3 MINUTES UNTIL CHEESE IS MELTED AND BREAD IS TOASTED. GARNISH WITH PARMESAN AND FRESH BASIL. SERVE REMAINING MARINARA ON THE SIDE FOR DIPPING.

2-1/2 LBS WHITE AMERICAN CHEESE

2 CUPS MILK (WHOLE)

2 CUPS ONIONS, YELLOW (SLICED IN PAPER THIN STRIPS

1 CUP CILANTRO, (CHOPPED, STEMLESS) (1/2 BUNCH)

1/2 CUP PICKLED JALAPENOS (FINELY CHOPPED)

1 TBS + ¼ TSP CUMIN


PREPARATION

COMBINE ALL INGREDIENTS IN A MICROWAVE SAFE BOWL AND MICROWAVE , STIRRING OCCASIONALLY UNTIL EVERYTHING IS INCORPORATED AND HOT.

PLACE ALL INGREDIENTS IN A CROCKPOT STIRRING OCCASIONALLY AND HEAT THAT WAY.
