January 21 Food Truck Schedule and News for Dallas and Fort Worth

Although we’ve had a couple of nice days, this winter weather is still keeping many of the food trucks and trailers moving slowly.  SoCal Tacos and Enticed remain in winter hibernation.  Good Karma has planted themselves at Clear Fork Truck Park in Fort Worth through March.

Ruthie’s Creperie is finally coming out in public more often, so we are adding them to our schedule.  They’ll be out a few times this week.

Dallas’ first BBQ food truck is finally here.  OinknMoo has a food truck built by Cruisin’ Kitchens.  I think every truck that I’ve seen in Dallas built by Cruisin’ Kitchens has been successful, so at least OinknMoo is starting off in the right way.

The Happy Hostess Presents a Healthy Menu For the New Year (Recipes Included)

I’m not a New Year’s resolution kind of gal. And you won’t be seeing me sign up for a juice cleanse anytime soon. Mother Nature gave me her own version of the juice cleanse over the holidays that left me with my head in the toilet for four days. By the time January 1 came around, I was ready to give up my Gatorade and chicken broth diet for real food.

I was all too excited to cook the recipes I had earmarked over the break in Burma, Naomi Duguid’s hot new cookbook that so many people have been praising. As a self-proclaimed adventurous eater, I take pride in the fact that I prefer ‘authentic’ cuisine over the watered-down American fusion version and can handle a serious amount of spicy heat. I have built up my sense of pride only to show you how far the mighty fell last week. I did make a multi-course meal’s worth of recipes from Burma, in the hopes of sharing a Burmese dinner party idea with you. A few bites in, I threw it all away. The flavors were way too much for me. This is not Duguid’s fault — I’m convinced I was just not strong enough for it.

My Five Cents: Scenes From Exhibition Kitchens

All the world’s a stage.

Dear Restaurateur,

If you design your kitchen so customers can watch your chef do their thing you’d better be sure they are on their best behavior at all times. Here are just a few incidents I have witnessed in the last month.

Busboy in u-shaped bar with customers all around him takes a plastic ice tea glass and fills it with ice and about four fingers of bourbon. He tops it off with Coke. He then walks through the upscale dining room to the open kitchen and hands it to the chef who takes a healthy swig. During dinner service.

I’m waiting in a short line for the ladies room which is located basically inside a restaurant’s very busy kitchen. The dude standing over the grill making fajitas (whoops!) wipes his sweaty brow with his forearm first and then a towel which he slings over his shoulder. He removes the meat, wipes the stainless steel table with same cloth, tosses meat down, and begins to chop with  glove-less hands.

It’s a slow night in a restaurant on Cedar Springs. The entire kitchen staff is standing around a various little groups and chatting. One chef is eating a sandwich. One male cook has his arm wrapped around another male cook’s waist. When an order arrives, they break apart but not before one plants a big fat kiss on the other.

I could go on.   And I’m sure some readers will chime in with other tales. I hope you listen and remind your staff to remember they are performing in front of a live audience.

Keller Resident, MiMi Johnson, to Compete on Bobby Flay’s Dinner Battle on Food Network

Another day, another new food show, another Dallas-area resident on TV. I don’t watch enough food shows to know but it seems like the producers pick plenty of contestants from North Texas.

This morning comes word: Keller resident, MiMi Johnson, is competing on Bobby Flay’s new show, Dinner Battle on the Food Network. The show features three teams of home cooks battling to throw dinner parties. Wednesday’s show was shot in Dallas. The premise? “Three teams of the best home cooks in Dallas to throw a Wild West themed dinner party.” That’s an innovative theme.
