Chef Anthony Bombaci’s New Position at Hilton Anatole in Dallas

Today comes word that former (ouch!) Nana execuchef Anthony Bombaci has been promoted to a new position at the Hilton Anatole. Official word:

In Chef Bombaci’s previous role at Nana, he was able to share his outstanding culinary gifts with only a portion of the Anatole’s vast clientele. In his new role as Hotel Chef de Cuisine, his influence will be felt not only in our new steakhouse, but in all of our other food and beverage outlets, as well as our critically acclaimed banquets department, where we serve literally tens of thousands of satisfied guests every year.

    Please someone give this man his own place…and not a steakhouse. Just a small, intimate, lovely place. We need his talent, we don’t need a steakhouse.

    What are their “other food and beverage outlets”?Banquets are great for showing off speed plating and prep skills, but not much else. I imagine the most fun he’s going to have in the steakhouse is figuring out how many different ways he can cook broccoli and potatoes.

    Tony needs his own restaurant. My wife and I first met him in Barcelona at his old gig at the Ritz, back in 2000. We couldn’t believe he was in Dallas a few years later. Now he’s a F and B guy? Hmmmm. Somehow, we gotta get this guy his own place.
