After what may seem like interminable construction delays, Sutra, Vijay Sadhu’s high-end shrine to Indian influenced global cuisine, is set to open at The Shops at Legacy in Plano this week. It won’t be tonight (Sutra will be closed on Mondays) and it won’t be tomorrow. Most likely, it will be Thursday, as there is still some staff training and a wine list to finish. Judging from a friends-and-family dinner I was invited to this weekend, early diners are in for a treat.(972-398-9339)

Tuna Tarbooz Ceviche and Sweet and Spicy Water Melon & Mango Chaat with Tamarind Jam ($10).
Goan Shrimp Sofrito and Kuchumber Relish on Endive Boat ($8). Based on the cuisine of the state of Goa. The sauce displays the apparently contradictory facets of heat and sweetness, the latter contributed by the onion.
Mussels Cataplana Poached in Rich Tomato Sauce with Peppers and Potatoes, Seasoned with Piri Piri Spice, Mustard Seeds and Hing
When this dish arrived it occurred to me that I was in a Spanish restaurant. A moment’s thought made me realize the correct part of Iberia was actually Portugal. The Portuguese colonized part of India and, while they have long gone, their influence on the cuisine of major Portuguese settlements, such as Goa, continues today. That sauce, by the way, is not just tomato. It is a rather complex, nuanced broth that could be served on its own. This was my favorite dish of the meal.
The Main Courses
Seared Scallops in Tamarind Coconut Sauce, Jasmine Rice Cake and Infused Kari Leaf Oil
Chipotle Tamarind Chutney Glazed Pork Tenderloin with Cinnamon Apples Compote and Navarathan Sauce
($16). The char on that pork would put a lot of local barbecue places to shame. This dish is a variation on the classic pork and apples theme with a nod to the southwest (chipotle) and nuts and green chili in the sauce.
Rabbit Tikka with Potatoes, Spicy Apple Chutney and Tandoori Vegetables ($16). (not shown). The chutney is the thing here.
The restaurant is casual yet modern with vivid orange walls and dark wood seating. Just inside the door is the extensive bar which is just as well since Sutra is located right next door to Sambuca. That is the closest thing in Plano to Cougar Town and Sutra can probably expect some bycatch.
