Raspberry Spinach Salad

12 oz baby spinach leaves, rinsed, dried and torn up
11 oz can mandarin oranges, drained
6 oz bag Cran Raisins
1/2 cup chopped walnuts
1/2 cup sunflower seeds
Pour raspberry vinaigrette lightly over the above ingredients and toss. Marinate in refrigerator for a few hours ahead of serving time. May increase all ingredients to taste.
Layered Pea Salad

2 heads of lettuce
1 package frozen peas
10 pieces of cooked bacon, crumbled
1 large package shredded cheddar cheese
2 bunches of green onion, chopped
In a large 9 x 13 pan, use half of one of the heads of lettuce and tear into pieces. Pour 1/4 of the package of peas over the lettuce. (You need to thaw the peas prior to putting on the salad.) With a spoon, cover the peas with the mayonnaise. Sprinkle crumbled bacon and green onions on top of the peas. Cover with shredded cheese. Continue layering this salad until the dish is full. Let it sit in the refrigerator overnight.
