Tom Fleming’s Crossroads Diner Set to Open in October

Chef Tom Fleming has just signed a lease on a restaurant space at 8121 Walnut Hill. Hopefully by mid-October his Crossroads Diner will be open for business. Fleming is concentrating on breakfast and lunch—he will only offer dinner service on Thursdays, Fridays, and Saturdays.

Making breakfast runs in the Fleming family—Tom’s brother Robert owns the Magnolia Pancake Huas in San Antonio. “I’ve always wanted to open a breakfast joint,” says Tom. “I don’t want to do fine dining. I want to spend time with my two young daughters.”

Will his brother share his coveted pancake recipe? “No. We’re going to have a pancake war,” says Tom. “My brother is my mentor, godfather, and best friend. He will help me with all of the advice I need. But he won’t give me that pancake recipe.”

  4. It’s the old Cantina Laredo (then a Chinese Buffet) space next to the former Houston’s location.
