Molecular Mixology at The Second Floor in Dallas

Dallas is well-known for a lot of great happy hours but if you want one that includes a show to go with the drinks  that will have you talking about your experience for weeks  head to The Second Floor at the Westin Galleria. Execuchef J. Chastain has devised five molecular mixology cocktails with flavors and textures quite unlike almost anything else around.

This is one of those cases where the proof of the pudding is in the drinking so let’s go through the preparation of each cocktail with gun and camera…

Fire and Ice Shot. J. Chastain’s take on the familiar mojito.

Strawberries and Crémant Cocktail. It looks like salmon roe floating in the glass, but things are not always what they seem…

Bloody Mary Sorbet Trio. Three glasses, containing Vodka Tequila and Gin, are each made into a Bloody Mary. This dish got three out of four votes in our party as Best of The Bunch.

Light Cosmopolitan. Hanger Mandarin Vodka and Cranberry with Lime Viognier Foam.

Nitrogen Car Bomb. Guiness Float with Nitro Jameson Bailey’s Ice cream. My personal fave.

  1. Another gimic. When is Dallas going to get over these things??? This was a fad for a hot minute on the coast years and years ago. Now all the sudden Dallas is looking to reinvent the cocktail scene. Tell does anyone know what a Japanese Cocktail is or a true Smash. You still can’t even get a proper margarita at most bar. Let me guess you all think that the margarita was created by Dallas socialites that traveled to Mexico. Learn where the cocktail came from then take it to a new place.

  2. First of all, I think this looks fun. Call it a gimic, if you want. So what? The drinks are beautiful and I love to eat and drink pretty things.

    Secondly, how does this work? Is it a package deal? Or do you pick the drinks you want? I don’t think I could down 5 in one hour, though they all sound incredibly tasty! Is it limited seating?

  3. Space is limited, right now they are just doing this at the bar which seats 12. You can pick the drinks you’d like to try and while you’re there, appetizers are half off. My boyfriend and I had two drinks each so we got to try almost all of them. I was most impressed with the Fire and Ice shot.

  4. Well I travel and eat in Europe and America but this MG will not last for long… People want good food but not chemicals.. Look at our local chefs like Dean, Ken, David of Lola, Tim of smoke they don’t do this crazy things. Come on people! Texas produce such a good meat cuts and vegetables, lets not go into this MG or I call it just tasteless chemicals meal. I did try in NYC and London in few well known restaurants but there is hardly any taste in that, yes it looks great and wonderful but how about the taste??? I like to go to restaurant to eat good meal but not chemicals for sure.

  5. foodlover: If you get a chance, swing by The 2nd Floor this Friday if only to try the Bloody Mary Sorbet Trio. I think you might find it the tastiest Bloody Mary you have drunk.
