Alberto Lombardi to Open La Fiorentina in Dallas

Restaurateur Alberto Lombardi is lacing up his armor jumping into the battle of the Dallas steakhouses. Criminy,  he’s picking up where Matthew Antonovich left off–he’s opening La Fiorentina, a Tuscan-style steakhouse in the former Chip’s Burgers location on Cole Avenue. The rest of the biz is below. Go.

Housed in the iconic former home of Chip’s Burgers on Cole Avenue in the Knox Henderson neighborhood, La Fiorentina will be an intimate, casual restaurant seating forty guests inside and thirty additional guests outside on a beautiful covered patio. Arriving at your table, you’ll be served complimentary hot, fresh bread made daily in house, Italian olive oil and chopped tomatoes. Starters will feature a choice of two seasonal salads and two soups including a traditional house-made Tuscan bean soup. (Included in the price of your entrée) Entrees will include a Petite Filet, a regular 8oz filet, 14oz ribeye and the traditional 27oz Fiorentina or porterhouse. Fish options will offer a whole roasted fish of the day and skewers of jumbo roasted shrimp plus other specialties. Side dishes including vegetables, potatoes and a pasta of the day will be served family style and are included with the price of your entrée. The wine list will offer a mixture of Italian and California choices. La Fiorentina will have beer and wine only. Finally, dessert will showcase traditional Italian favorites. The projected opening date is the end of June 2010.

  1. I wonder if he will stay true to Fiorentina and:

    1) not add salt to the bread

    2) refuse to cook bisteca alla fiorentina past rare…

  2. Kind of sad about this. We have so many great steak houses here, why get in that game now? And, I was hoping for pizza.

  3. I’ve had “Tuscan steak” in Tuscany. I doubt if most Dallasites will shell out the big bucks for a 3″ thick (minimum thickness) porterhouse that was cooked blue rare. In Tuscany, these steaks are usually shared by two or more. What happens when one wants it blue rare and one wants well done?
No, Alberto will Americanize it beyond recognition and it will be just another Dallas steak house.
