Update on Chapman Chile Kitchen in Dallas

I stopped by Shed 2 at the Dallas Farmers Market on Saturday to catch up with Fran Chapman. She was there with the other specialty food vendors selling 32-ounce containers of Chapman’s bison chili (mild, spicy, and 50/50) and their stuffed jalapenos. Things are picking up for the Chapman—Randal still runs the store on Carroll Ave. near Munger Place and Fran works the DFM on the weekends. They plan to ramp up production for the Farmers Market and hope to sell to other local outlets as well. (Attention Central Market, Whole Foods, and locavore restaurants—local bison chili is now available.) Between running a restaurant and the stand at the DFM, Fran and Randal have four kids. Saturday they all came down to help Fran shut down the stand.

    I’m disappointed in the pic above – not of the wonderful family – but the one of the chili. Why would you show me what shredded cheese looks like instead of the chili?

    I wish these guys all the luck in the world – Dallas has needed a legit chili parlour for some time now…

    They are good people. Wife and I picked up some 50/50 and a half dozen stuffed japs yesterday at Shed 2 to eat during the Cowboys game. see what good it did? everyone needs to eat Chapman Chili and the Cowboys will win the Superbowl.

    Does anyone know what they charge for the 32 oz. containers? I’m thinking football watching parties, and I have a ton of hungry chili-loving friends!

    I think it was around $12- $13 but I bet if you were doing a big party you could call them and get a catering price.

    Darnell, you got that right! Their spicy chili is really freaking spicy, but the spiciness doesn’t mask the complexity of the chili itself.

    Delicious stuff. I know what I’m doing for lunch tomorrow!

    as for pricing, it was $20 even for a 32oz and 6 stuffed jalapenos (which are AWESOME). you take and bake the stuffed peppers, so they’re not greasy at all.

    It is good to hear they are turning their story around. I personally have had both the chili and stuffed jalapenos. Both of them superb. The stuffed jalapenos are fresh and not prefried like many other comptetitors. The fresh flavors come through better and the peppers aren’t stuffed with gobs of processed cheese. The chili is spicy goodness highlighting the chilies that are available in the Dallas market.

    As a side note perhaps they should also look into selling to the Highland Park and Southlake concessions on Friday nights. Who wouldn’t pay $6-$8 for that chili pie?

    Hey thanks everyone for coming out to Shed 2 this weekend, so much so that we sold completely out of chili! We will have more on Wednesday but if you stop by the Kitchen today (Tuesday, Oct 27) you will get to see me running around crying from chopping pounds of fresh habaneros.

    Tell me what goes in your stuffed jalapenos. I make these weekly and would LOVE to be relieved of the chore.

    Oo. I read the blog about the wacky chili cook off you entered. I think you should have given them the long arm of the chili, regardless, and made em suffer through it. Wolf Brand, baaaa.

    Some people, sometimes, get what they deserve. In this case, not good chili. They had no clue. Sorry, Randal.
