Carolina Galvan-Rodriguez is Opening Another Carolina’s Mexican Cuisine in Plano

Somebody tell Carolina Galvan-Rodriguez that we are in a down economy—she is opening four new restaurants before August 4th. Wednesday night she debuted Carolina’s Mexican Cuisine in North Dallas. (I’d show you the pictures we took, but I can’t find the photographer. Nice work, Dude.)

Minutes ago, I learned that the second location of Carolina’s (at 75 and Parker in Plano) will open Friday, June 26th. Then, in late July, the former wife of MCrowd founder Mico Rodiguez, will open her first location of Taco Mundo at Preston Royal and a second location on August 4th. The location of the second Taco Mundo must be top secret—it wasn’t in the press release. Neither was the menu. Go. Eat. Report.

  2. Been there it’s great, patio is awesome, lot’s of beer on tap but don’t bother with that get the La Bamba, you can drink beer at home.

  5. Taylor I read somewhere that the location in Plano is going to be in the old Marios Chiquita next to the farmers market. That location Luna was in is a death trap.

    They should get plenty of business just with the spillover from Chuy’s

  7. The one at Rosmeade and George Bush is awesome… brisket tacos and the La Bomba were really good and the patio is really cool…. nothing like it around.

  9. What happened to Mario Chiquita!? That is an understatement! I guess Plano needed another Tex Mex restaurant. Too bad they can’t have a quality place like Mario Chiquita.

  10. Went for lunch: great civiche and authentic mexican food. Went back for drinks and dinner a few nights later: fun drinks and a nice patio once it cooled down a bit. The service was really good. Will be back!

  11. The food at Carolina’s is top notch! I had their taco dorados spot on fresh fried. It’s great that they are opening in Plano!

  12. The food is BETTER than Mi Cocina! Service is excellent, and they play great music Thursday-Sunday nights after 9. Patio is awesome, too.
