    You know, Nancy…I’ve had two very mediocre meals in the last year or so at the Mansion. So, maybe it wasn’t just me?

    My husband and I had one of the most extraordinary meals we have ever had at The Mansion, and Chef Tesar treated us like royalty. Chef Tesar: Thank you…your unselfish contributions to the local charity events in DFW are to be commended. Best wishes to you in your future endeavors.

    We had one of the best meals and the best service during “Restaurant Week” here.

    Sad. A loss for them, but hopefully he is off to pursue what he needs to.

    I’ve known people who have worked at TMoTC for him and they say he is a giant d word. Absent a lot too. Plus given the Mansion’s obvious financial struggles (remember laying off of all those people) and the fact that it isn’t very busy, can’t say I’m surprised.

    Chef Tesar was (and is) a dream to work with and gave tirelessly of himself for many charities in town. Although it is a loss, I have every confidence that The Mansion will recover gracefully and not miss a step in continuing to foster their new image.

    Glad it’s over for the other hard working people at the Mansion. Maybe I’ll come back…

    Ask anyone who has worked at The Mansion, and they will tell you that although JT was a great chef, his act was way too much for everyone there to deal with. I mean bad. Real bad. Suprised he lasted this long. Dean must be crying himself to sleep at night!

    I haven’t been back since a lunch with a friend who had a live inchworm in her salad. The unapologetic attitude and the air of ‘it’s to be expected’ was unacceptable.

    It is a sad day in Dallas when the only chef that actually knows how to cook food is gone. I worked with the man and he has more knowledge and passion for food than most. Where ever he ends up I will be sure to find him and eat there.

    Rumor is that Tesar and Avner Samuel are opening a new restaurant to be called Fireworks in the Kitchen but can’t agree on whose name will appear first on the menu.

    I worked with Tesar in New York, and Las Vegas.
    He is intense hard working and so talented, Dallas was lucky to have him. He did more in 3 years then Dean Fearing did in 18.
    I hear through the Chef grapevine that he is opening his own restaurant here in Dallas or Miami and let’s hope it” here !
    I know for a fact that he did not get the boot. I here some young waiter who had never had a restaurant job in his life that now works at Wolfgang Puck was hired to work with him in the kitchen and hated the fact that Tesar made him work really work and when he left he tried some HR sabotage on my talented chef friend.
    When confronted with these claims the kitchen staff chose to stand behind the Chef, but several long term employees where hand picked to set him up.
    My buddy who still works at the Mansion told me Chef had already had plans to leave because of a bad economic situation at the Mansion. coupled with the sad reality the rooms where not going to be fixed up and a serious lack of marketing and PR vision.
    Come on folks all good Chefs have to be a little ****ish, thats why the food taste so good just ask Nancy N she rude.
    Tesar’s has worked with many French chefs, he is a puppy dog compared to alot of great chefs I have worked with.
    He is also a New Yorker too! Blunt, honest almost to a fault, sometimes mean yes but when he is mea it is well deserved, He does it with a great scarcastic sense of humor.
    He has pride, passion and never does anything to ruffle your feathers once the service is over .
    He is a pro, I worked with him for over 5 years and now i work in Austin.
    When dinner was over he drank some wine and he was the nicest guy in the world, he cared about everyone in his own special way
    Fact is I would say he is the finest Chef that Texas has ever seen and a great man.
    He has taught me more than any Chef I have ever worked for
    This guys is somebody who are you anonomus bloggers ?Do you have anything better to do with your lives and frankly some of you just make stuff up or work for other restaurant and take cheap shots!
    I would work for him anytime, anywhere
    I am tired of lazy selfish people in the food and beverage industry who do as little as possible and make restaurants difficult to achieve success.
    People who live on the dreams and old words of the Mansion’s past which are long gone my friends.
    This guy was your hope to be something young, fun, real and different.
    The fact is that scared 20 year old Mansion waiter’s who could care less if they were serving tacos or tortilla soup tried to run him out of the Mansion and the PC attitudes of a stodgy corp HR mentality almost let them do it, except he took a stand.
    Shame on the Mansion ! This bad choice may come back to haunt you for a long long time

    Your a jerk Tesar is a true 5 star Chef and a great leader What did you do at the Mansion that you call yourself rock star ? change the strings on Dean guitar and make lobster tacos?
    Dallas knows who the real rock star is and know he’s gone

    Tesar did more in 3 years than Fearing did in 18?

    Let’s see. Fearing co-invented Southwestern cuisine. He helped put Dallas on the map for food. He made the restaurant the only one in Dallas ever to have had both five Mobil stars and AAA diamonds. He mentored many chefs who went on to make respectable names for themselves (in Dallas and beyond). He left his job gracefully and with a clear plan for what he was going to do next.

    Tesar is a good chef and has helped Rosewood through a rough transition. But he has had nowhere near the impact of Dean Fearing.

    old news is no news….. Mexican people and Indians invented southwestern cuisine and like the other things the Indians had the white man ripped that off too!
    Plus Avner did it before Dean, Mrs Hunt brought the taco back from a Mexican vacation and a small man from Mexico made the tortilla soup and still does. Sonny Bryan makes the BBQ sauce ….?
    The rest are muddled flavors outdated creations that you can get at fast food restaurants for pennies on the dollar. Crab cakes, caesar salad and nachos that was like the 80’s right ?
    Get your facts straight and stop telling a fable from the 80’s when the Mansion was the only restaurant in Dallas.
    It’s 2009 and we even have a black president and some texas even drive in the fast lane rather than the exit lane all the way to Plano !
    For the last two years the Mansion served real haute cuisine. they also lost the fifth star prior to the new chefs getting them back . so think about that one for a minute

    Facts,

    1. I am a accomplished Chef myself who knows both Dean, and John , Both are amazing Guys and great cooks

    2. I heard this other info from a cook who works side by side with Tesar and hate seeing lies or made up stories on the internet, no matter who they are written

    3. Cooking is not a competition nor is it top chef or a beauty contest ala Casey, but if you put both mansion and fearing dinners side by side TODAY not 15 years or even 5 years ago , which one would be the better I believe the critics have spoken and so has the dining public

    4. Enough senseless gossip and hating.

    5. blogging need some rules and accountability if journalist are going to keep supporting it

    Seem like your first post contradicted itself there truth. First you say that he left of his own accord and then say that it was because old employees sabotaged him and a failing economy. so which is it. Was he booted or not? you imply different things.

    Truth-Welcome to the dark side. Please don’t leave us as I would like to start a conversation this week about blogging and the anonymous dart throwers. Between the cheap shots and the gossip, there is a story that will eventually be told. You sound like a well-informed person. Kitchens all over town are struggling. There is immense pressure everywhere and tempers are flaring. I’m taking out Mark’s comment because it doesn’t fit into what should be an intelligent discussion of a high-profile chef leaving a high-profile restaurant in the middle of an economic crises.

    one more thing what worth his pound of salt is not strict, not in charge, as a Chef myself I am always fascinated by outsiders or first time restaurant workers reaction to great Chefs yelling in the kitchen,,,,,, Gordon Ramsey, Tom C from top chef, Bobby Flay etc all yell at cooks and waiters even bosses and partners wake up folks. if you love the restaurant business really learn about it !

    OK I read this last night and know its a few days old…but here is the deal. John is charming, funny and personable, and an absolute ass! Yes. I jave been his friend and worked with him and know both sides of him. Whatever happened at the Mansion is his business, not all the busybodies. And truth probably has it right, alittle of all of that, with a culmination of him choosing to leave. John never intended to make a lifetime commitment when he took the job. It was just a good career move.
    John is all the things chefs have a reputation of being, he comes from the old school, and unfortunately to many workers are coddled these days. Mind you I have been on the end of a few screaming matches, but heres the deal…He is an extremely talented man, has a font of knowledge and like to share. There is good and bad in all of us, he’s human! So those of you attacking him on hearsay, careful…that can come back to bite you. John will never be an easy man to work with or for, but you will be challenged and pushed to be better. The naysayers are the people who can’t hang, think about that the next time your “friends” have a mean thing to say. It’s STEP UP, or Step Out

    Last year I went to a BBQ class led by John Tesar at La Mansion. He seemed like a nice guy and the food was outstanding. The only downer was they had promised to post the recipes online. Despite follow up emails they never did. John seemed approachable.. The management at La Mansion not so much.
