On July 12 we reported the sad news that chef/owner David McMillan had to close his highly acclaimed restaurant in Colleyville, 62 Main. Well, thanks to Tristan Simon, head honcho of Consilient Restaurants, I’m happy to announce McMillan will start on Tuesday as the new corporate executive chef of the company behind Fireside Pies (multiple locations), Hibiscus, Cuba Libre, The Porch, Victor Tango’s (opening August 25th), and Westside Tavern in West LA (opening early October).
“The first thing he is going to do is the menu development for Victor Tango’s,” says Simon. “It’s going to be a gastro pub menu with a West Coast slant.”
After the departure of corporate executive chef Nick Badovinus last December, Simon took time to think about what kind of person would be best to fill the open position. “We are continuing to develop new chef-driven projects and I needed someone who could relate, on a corporate level, to our chefs,” says Simon. “David has the experience to oversee their creativity and be a collaborative, mentoring figure. He’s creative and has great educational skills.”
Great news! LOVED 62 Main and, although I’m sorry it closed, at least I can now enjoy David’s talents closer to home.
Great news! Wondering if anyone knows whether Fireside Pies on Henderson still allows cigar smoking at the outside patio. Hope not- -it ruins the experience.
Fantastic. I’ve missed him since he left Nana. I did go to 62 Main a couple of times and it was great. Just happy to know he landed in a good job. Not too many of those left out there.

Word is that Consilient is relocating its offices to the old Ironworks building behind Hibiscus along Willis Avenue. David may be housed there. Imagine if he had a “corporate” kitchen to use there. Lunch meetings would take on a whole new meaning.

David’s food is so fantastic it has to be enjoyed in more than one location. So excited asbout it! We miss him in Colleyville.
