It’s the Most Wonderful Time of the Year

No, it’s not my birthday, it’s peak corn season here in the great, “The Fightin’ Twenty Eighth” state of Texas. And the Baroness of Blue Mesa, Liz, and her husband Jim are on top of the situation. Long supporters of our local farmers, the Barons have designed a Corn Festival. From June 15 through the end of August, Blue Mesa will feature dishes highlighting corn– Silver Queen, Butter & Cream; Jersey Gold, and Super Sweet-grown by local farmers Larry Harvey and Roger Heddin.

They’ll be kicking off Corn Festival on Thursday, June 19, at all five with a special dinner. Each variety of corn will be featured at the buffet in special dishes including corn fritters, Southwest succotash, Blue Mesa’s famous corn cake, pork tenderloin with a warm corn relish, corn crusted grouper tacos, shrimp and corn skewers with pomegranate chile glaze, chimayo market corn and sweet corn upside down cake with mangos, peaches, and blackberries.
