Tom Colicchio Talks About Craft Dallas

ASPEN, COLORADO­­–I just attended one of the seminars in the American Express Restaurant Trade Program that takes place alongside the Food & Wine Classic. It’s a great series of seminars designed for restaurant owners, and the panels are always stellar. The panel for this morning’s session, “Meet the Masters: How I Became Who I Am,” consisted of David Chang (my newest favorite chef), Bobby Flay, Barbara Lynch, and Marcus Samuelsson. The second seminar, “Taking it to the Next Level: How I Grew My Brand,” was most interesting and timely. Here we listened to Tom Colicchio, Marc Ecko, Joshua Wesson, Roy Yamaguchi. After the session I sashayed up to Mr. Colicchio and asked him about the rumors swirling around Craft Dallas. I asked him point blank, “Are you changing Craft into Craftbar?” He said, “You know, we thought about it for a while. A lot of people said our price point was too high. But, I don’t know, I think we’re just going to stick it out and stay with Craft for now.” Slick Willy, eh? I want to hire his media coach. Seriously, he’s a really smart dude and after listening to him talk about growing the Craft brand and his philosophy, I have to say his heart is in the right place. I want to believe him about Craft Dallas, but something tells me that it will change. It’s only a matter of when.
