People who do not drink coffee make me a little nervous. Many mornings, my only motivation to crawl out of bed is the thought of a huge, steaming cup of my morning coffee. I don’t always have a lot of money, so I end up buying the cheaper stuff, but if I were rich like you, I would buy Central Market Organics Coffees. You can find them in the bulk section. They’ve got Breakfast Blend, French Roast, Panama Finca Santa Barbara, and one I really like the sound of, Sumatra Mandheling (yes, please!). Prices range from $9.99 to $10.99 per pound. Go and buy now.
This is something that slips by a lot of foodies, but coffee oxidizes quickly (like an open bottle of wine). This means that truly fresh coffee, roasted within a week or two of consumption, tastes much better than stale.
Organic or not, none of the coffee at Central Market is marked with a roast date. And much of it sits in large semi-open bins, where it stales rapidly. Drinking organic coffee that was roasted 2 months ago is like eating organic bread that was baked 2 months ago.
When I want fresh coffee, I purchase from a local roaster like White Rock Coffee or The Coffee Company (in Lakewood). Whole Foods does in-store roasting but the quality is inconsistent in my experience.
And of course you’ll want to grind at home, preferably with a burr grinder, if you want to maximize the flavor of your fresh coffee.
Sarah,
If sweet nothings like “Sumatra Mandheling” are music to your ears, you will probably enjoy the well-written coffee descriptions at San Francisco-based Blue Bottle Coffee… check it out:

World Market has fairly good prepackaged coffee that isn’t too expensive. For freshly roasted, ditto to RL, but I’ll add Drip Coffee on Lovers. And now you can get Dunkin Donuts coffee at some grocery stores. Granted, it has likely sat around for a few weeks like other prepackaged coffee beans, but it is still leagues better than Starbucks in my opinion.
RL, a few more places to get it fresh:

Stephen,
I forgot that you guys had posted about local coffee roasters. You even linked to coffeegeek and home-barista. Guess I’ll step off my high horse now.
Keep the coffee entries coming! I would love to see the foodie community embrace coffee that equals their food standards.
