I Love Pimento Cheese

Yesterday, I mentioned that I ate a pimento cheese sandwich. The wrap in question was made by Two Sisters Catering. They make a lovely pimento cheese. So does Corner Market on Greenville. We all know Highland Park Pharmacy makes one and I love to eat their grilled version, the Palm Beach, but I think the atmosphere adds to the actual taste of the sandwich. Central Market does a fine version during Hatch chile season and Whole Foods always has a mixed cheese version in their cold case. I love to dip potato chips, celery, tostadas, and my fingers into a good ol’ bowl of pimento cheese. I’ve been known to melt it on a burger or a baked potato. (Yuck, I’m going all Paula Dean on you, sorry. Next thing you know I’ll be doing shots of butter and snorting lines of sugar.) Anywhoo, I make the best pimento cheese and will not share my recipe until Pillsbury pays me $1 million. (Hello, Pillsbury? I use more than SIX ingredients. The number is 214-939-3636.)     I even like the regular Pimento Cheese they serve in the olive and dip bins at Central Market. There is some kinda garlicky kick to it that i cannot reproduce. The Hatch version is divine though.

    I think it’s more the quality of cheese you use versus the other ingredients that makes for a good spread. An awesome cheese with just pimentos and mayo is my way to make it. I’m a purist.

    In fact, I wish I had remembered to buy the fixins to make it last weekend in honor of the Masters but I had cocktails and forgot.

    Hatch chili pimento cheese in scrambled eggs, sister. Try it, you’ll like it.

    I make PC with equal parts shredded swiss and medium cheddar cheese, mayo, dash of cayenne pepper and a half dash of garlic power. Good stuff.

    I love it from Short Stop in Snider Plaza. I don’t what makes it special, I just remember I used to like it.

    That was before I totally went off the dairy. But that is another story for another day.

    BUT! If I were to go back on the Dairy for one day… I would have the queso at The Mont in Norman, OK., Crab Enchiladas at Gabriels ’s in Santa Fe, grilled Pimento cheese at HP Pharmacy, and a baked potato with cheese, butter and sour cream. OH! smoked Gouda Cheese on a triscuit and a nutty buddy.
    Plus a big ole tummy ache and a sneezy nose on the side.

    There was a delicious pimento cheese you used to be able to find at Sam’s Club that I grew up on. If anyone knows what kind that was, I would be forever indebted to you.

    And M, any good crab enchiladas in Dallas?

    Crab enchiladas… not that I know of….
    But that is just a good reason to make a little trip to Santa Fe! Gabriel’s is on the road to the SF Opera, beautiful! They make that tableside guac which is the best I have ever had. I know they do it at Blue Mesa and other places in Dallas, but this guac is so much better. Maybe it is just the view of the mountains as the sun sets with a cold margarita (just tequila, and fresh squeezed lime, no filers, up!) that makes it so special!

    Damn, I need to go back!

    hey maybe todd of top secret recipes can analyize the pimento cheese and can have a pretty close match. it is amazing the recioes that he has reproduced. i know paula is a pistol. she has a vulgar streak in her, she has said so many things i have lost count. i just lost respect for her when i found out that she had been having an affair with a married man for ten years. that did it for me. and then she wrote the book it aint all about the cooking. well i think the book title should be changed to it ain’t all about the cookin’ and the hookin’ ya’ll. girls if you have an affair with a married man where is your dignity? you are better than that. all you have to do is pray to the Lord and He will send you a man. you have to have faith. guy f. and tyler f. rock!
